Shaped by a harsh climate and the rhythm of the seasons, T\u014dhoku has developed an extraordinary culinary tradition in which fermentation plays a central role.<\/p><p>In this talk, I'll take you on a journey through the history, cuisine and culinary heritage of T\u014dhoku.
